Menu Plan April 19 - 23

I must admit, we got home Wednesday evening, and it's been a bit of an adjustment to get back into house work/meal making mode! I've never really been on a vacation like this before and until this morning I've been resisting giving up vacation mode!!

After a few hours of work for the business this morning and menu planning last night, I feel ready to get back into real life. We are still dealing with some jet lag as Charlotte is going to bed quite late which makes for difficult and tiring evenings. Hopefully with time we will get back on track.

Here is the plan for this week! I found some inexpensive pork and extra lean ground beef at our local supermarket last night, so our menu for the week is planned around those. On the weekend, we had a yummy potato/carrot/cauliflower soup and a whole wheat pasta dish. Tim is ready for some meat in the menu I think!

Monday: Baked pork chops with asparagus and celery and cream of celery soup over rice
Tuesday: Shipwreck casserole
Wednesday: Leftovers
Thursday: Sour Cream Pork Chops (with some modifications as we don't have a slow cooker), Rice or Egg Noodles and Green Beans
Friday: Taco Salad
