Menu Plan January 16 - 20

I have been menu planning, loosely over the past month or so.  Of course menu plans were disrupted over the holidays and I was able to have a break from cooking while visiting my mom and dad in Nova Scotia.  It was such a treat to enjoy Mom's cooking and take a break, and help out with clean up when I could.  I am going to be writing about my resolutions and goals this week, and part of that is healthy cooking and eating.  I am so excited to be attending an online course on this very subject starting in February.  My sister and "bestie" are taking the course as well, so I am so excited to share knowledge and have accountability in applying the concepts that I'm learning.  Hopefully I will be able to share on Menu Planning Mondays some of the concepts and how I am practically applying them in our kitchen.

So here is the plan for this week:

Monday: Beef Pot Roast with roasted potatoes, carrots, onion, garlic and parsnip
Tuesday: Tomato and noodle sausage bake loaded with veggies and topped with cheese
Wednesday: Leftovers (I'm out for a dessert night with my Mommy Friends and must come up with a yummy dessert to bake!)
Thursday: Corn Chowder (I'm going to try a new recipe that has more veggies!)
Friday: Pizza night with my easy pizza dough recipe

Today was cool outside (-14 ish this afternoon with windchill) but the sun was incredible and it was so nice to be out with the girls!  Had to share these...

(Yes her leg is green, actually the whole underside of her is green!  She sat on a painting after our last outdoor adventure, was wet with snow... and turned green.)


  1. All your meals sounds so good.. We normally have at least one left over night a week.

  2. So nice to see you blogging more regularly again! I can't wait to take that course too! I think its the refresher i need just about now in the kitchen! And maybe just maybe it will motivate me to blog more too ;) xo
